What is the difference between ice cream and Gelato? SCUBA SCOOPS Gelato is made here on premises using traditional Italian mixes. Gelato is cold processed; ice cream is churned, adding air into the product. Gelato is lower in fat content, only about 4-6% butterfat, where ice cream can be up to 14% butterfat. Gelato is kept at just under freezing; ice cream is a frozen product. Our Gelato is made fresh using quality ingredients to make a creamy, rich dessert treat. It's popularity in Europe has made Gelato a new favorite.
